You guys know I'm always looking for really easy and healthful foods. I love feta cheese, hummus and... garlic? Fuhgeddaboutit! I'm sold!
One of my favorite food bloggers is Rebecca at Foodie With Family and last week she posted this recipe for Roasted Garlic and Whipped Feta Hummus. She's a genius.
I made it. I ate it. I was happy. I need to make it again!
This recipe is so easy it has three ingredients and takes about five minutes to make. It's a perfect vehicle for all kinds of veggies (carrots are my fave) and crackers. It's also an amazing sandwich spread. And did I mention it's pretty darn healthful? It's perfect.
Rebecca's directions are more elegant, but here they are in a nutshell:
1 10 oz. tub roasted garlic hummus (I only had roasted pine nut hummus so I threw in some roasted garlic with it)
4-6 oz. feta cheese (I used low-fat cuz it's what I had)
4 oz. cream cheese (I used Neufchatel, the low-fat kind, cuz it's what I had)
Directions:
Throw the feta in the food processor and buzz it up. (Rebecca used a block of feta she crumbled herself. Mine was pre-crumbled cuz it's what I had. Makes no difference in the outcome. It's delicious) Throw in the cream cheese and buzz it up. Throw in the hummus and buzz it up until it's whipped and fluffy. Set aside some alone time to spend with the dip. Eat most of it in one sitting with veggies and congratulate yourself on all the added health benefits of veggies in your diet. Do not attempt to kiss spouse or furkid cuz... garlic breath.
