    Genki's Best Banana Bread
    (gluten-free recipe in post #2)

    1 cup sugar
    1 2/3 cups flour
    1/3 cup softened margarine
    1 tsp baking soda
    2 eggs (or substitute 1/2 cup of mashed bananas)
    1/2 tsp salt
    1 1/2 cups mashed bananas (3-4 medium)
    1/4 tsp baking powder
    1/3 cup water
    1/2 cup chopped nuts (optional)
    2 bread pans

    * Heat oven to 350 degrees. Grease bottom only of bread pans.

    Mix sugar and margarine in bowel. Stir in eggs (or extra 1/2 cup
    bananas) until creamy. Add bananas and water, beat 30 seconds. Stir in
    remaining ingredients, then add nuts (if desired).

    Pour into pans, bake until wooden toothpick comes out clean when poked in the middle of loaf.

    Let cool 5 minutes before removing from pan, and completely before slicing. Makes 2 loaves.

    1 cup Bob's Red Mill 'Sweet White' Gluten-free Sorghum flour
    1/3 cup softened margarine
    1 tsp baking soda
    2 eggs (or substitute 1/2 cup of mashed bananas)
    1/2 tsp xanthan gum
    1/2 tsp salt
    1 1/2 cups mashed bananas (3-4 medium)
    1/4 tsp baking powder
    1/3 cup water
    1/2 cup chopped nuts (optional)

    * Heat oven to 350 degrees. Grease bottom only of bread pan(s).

    I made gluten-free banana bread last year, but wasn't happy with how it
    turned out. I've modified it, and this recipe is would be
    indistinguishable from regular banana bread if you didn't know it was
