Popcorn Cake - a fun and festive treat Empty Popcorn Cake - a fun and festive treat

This is an old family recipe that I remember making with my grandmother when I was little. Amounts....well, we eye-balled all the amounts, and I still do to this day, but I'll try to come up with reasonable amounts. The extras in the "cake" are all to-taste.

    Genki's family Popcorn Cake:

    You will need:
    3-tbsp butter or margarine
    1 package minature marshmallows
Approx. 6 cups popped, unflavored, unbuttered popcorn
2/3 to 1 cup spice drops (or gum drops if you don't like the spicy ones Wink)
1/2 cup (or more!) honey-roasted peanuts
Angel-food cake pan, buttered or sprayed well with vegetable cooking spray

    • Melt butter in large saucepan over low heat
    • Add marshmallows and stir until completely melted
    • Remove from heat
    • Add popcorn and stir until well coated.
    • Add remaining ingredients, stir well and quickly transfer to angel-food cake pan. Press down firmly.

"Cake" will pop right out of the pan once it's cooled, and can be cut and served as a treat the kids are sure to love!
