Easy No-Bake Cheesecake:
2 ready-made graham cracker crusts
3 packages of cream cheese
1 can sweetened condensed milk
1/2 cup lemon juice
1/4 to 1/2 cup granulated sugar or powdered sugar (add to-taste)
1 tsp vanilla
Stir softened cream cheese in a large bowl, then slowly mix in
condensed milk (you will want the cream cheese to be softened, or you
will have lumps in your cheesecake). Blend thoroughly. Add lemon juice
and sugar (pour the sugar directly into the lemon juice as it will
dissolve more quickly that way) and vanilla, then blend until completely
mixed and smooth. Divide into the 2 pie crusts and chill until firm.
May add 1/4 tsp of amaretto (almond) flavoring for variation.
WONDERFUL topped with fresh, sliced strawberries.
