CHICKEN SPAGHETTI (from my hubby's side of the family):
You will need:
One large baking dish
Cooked spaghetti (3/4 to 1 package)
Approximately 3 cooked chicken breasts, pulled apart into bite-sized pieces
1 Family-sized can of cream of chicken soup + one can of water
1 regular-sized can of cream of mushroom soup
1 can of mild green chilies or green salsa to taste
1 can sliced black olives (optional)
Parmesan cheese
Grated cheddar cheese
After preparing the chicken, put spaghetti on to cook. While it is cooking, prepare the sauce:
In a saucepan, mix soup, water, green chilies or salsa (to taste) and
olives (if desired). Cook over low heat until heated through. Coat the
bottom of the baking dish with some of the sauce to keep spaghetti from
sticking when it is baked.
Drain spaghetti and add to baking dish. Top with chicken, sprinkle
generously with parmesan and grated cheese, then cover with sauce, using
a fork to mix a bit (just to make sure the sauce isn't just sitting on
top of the spaghetti. Top with parmesan cheese and a bit more of the
grated cheese to taste.
Bake in 350 degree oven until heated through.
Serve with freshly toasted garlic bread
