    Okay friends, I haven't done one of these in a while, so for kicks and giggles, here is my post-holiday-over-indulgence fresh and crunchy veggie roll-up. It's delicious and endlessly customizable.

    Ingredients:

    1 lavash bread (or tortilla or whatever bendy bread makes you happy)
    2-3 Tbs. Onion and Chive cream cheese
    3-4 Tbs. hummus (any flavor that makes you happy)
    Thinly shredded veggies such as red cabbage, carrots, and sweet mini-peppers
    Chopped mini cucumbers (some stores call them Persian cucumbers) 
    Crumbled feta (I used reduced fat, but you do you)
    Sliced kalamata olives (or not, it's your life) 

    You can also add any number of other goodies like shredded chicken or turkey or some chick peas or Napa cabbage or any other veggies or stuff that work for you!

    Directions:

    Spread a thin layer of the flavored cream cheese on the lavash bread going to the edges. I used an offset spatula. Then add the hummus and spread evenly to the edges. Using the veggies, make a "stripe" of goodies down the center of the bread. Try not to over load it, but I won't tell if you do. Then add the feta and olives. The trick is to then roll it like a burrito. Pull one side up over the top, then tighten it to the side of the veggies and roll up. The cream cheese and hummus should help to stick the bread edge to the roll. l

    Slice in half. Take pretty picture and post to FB. Feel smugly superior for making such a healthful meal and eat!
