    FABULOUS CHOCOLATE OATMEAL NO-BAKE COOKIES

    2 cups sugar
    1/2 cup cocoa
    1 stick butter
    1/2 cup milk
    1 tsp. vanilla
    4+ cups oats (depending on how chewy you like your cookies - I used about 4 1/2 cups)
    1/2 cup peanut butter*

    In a large pot, combine sugar and cocoa. Add butter and milk, then bring to a boil for one full minute.

    Remove from heat. Stir in peanut butter (or one of the substitutions listed below), vanilla and oats.

    Drop by large spoonfuls onto wax paper. Let cool for at least 30 minutes, 'til firm.

    DELICOUS!!

    * Peanut Butter Substitutions:

    Instead of peanut butter, try almond butter or Nutella (hazelnut-chocolate spread). If you opt to try Nutella, remember that it is VERY sweet, so maybe omit some of the sugar.


    I have not had this with Nutella, but it was fabulous with both almond butter and with peanut butter

    I just tried a fascinating change-up for this recipe.  For those who like to experiment, or people like me who are severely gluten-intolerant and can't eat oats:

    Substitute gluten-free Rice Krispies for the oats, and throw in some marshmallows at the same time.

    The alternating chewiness between the ingredients make for a really interesting texture~!
