    I have had to face facts: bananas come to my house to die. No one here says, "Hey, I'm hungry. I think I'll have a banana!" but my husband always thinks he's going to eat a banana, so he buys them. As a result of this, I often have brown, ugly "banana corpses" laying there on my counter looking pitiful. I decided it was time to stop throwing them away!

    I am also continuing to try to eat more healthfully, so I did what I always do: search on Pinterest.  Big smile This is what I found Banana Oat Greek Yogurt Muffins on www.runningwithspoons.com

    I had all the ingredients. It was raining out. I took it as a sign from the Baking Gods to get to work.  Evil Grin 

    Ingredients: 
    1 cup plain Greek yogurt
    2 ripe bananas
    2 eggs
    2 cups oats (doesn't matter what kind, they're going to get blendered up anyway)
    1/4 cup brown sugar
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 cup mini chocolate chips (I estimated until I felt happy with the amount of chips... it may have been slightly more than 1/2 cup... or less)


    Directions:


    Preheat the oven to 400 degrees. Either line pan with muffin cup papers or grease/spray generously. Toss everything except the chips into a blender of food processor. I chose blender because it made it easier to pour the banana goo into the muffin cups.  Buzz it all up. Stir in the chips. Pour into muffin cups/pan. I decided to sprinkle a few extra chips on top since I had gone light on the chips in the mixture. Bake 15-20 minutes. Cool for 10. Eat and enjoy the fact that you actually used the bananas this time.  Happy bounce 


    Notes: I baked mine for 15 minutes and probably could have left them in for another minute or so. These are quite moist and not too sweet. Mine stuck to the paper wrapper, so next time I'd either see if leaving them in a little longer helped them stick less, or use a sprayed muffin pan instead of liners. I would definitely recommend saving a few chips to put on top; it makes them cuter and when is more chocolate ever a bad thing? 


    You could probably substitute blueberries or other fruit/nuts for the chocolate chips, but why?  Snicker 


    Not bad for a quick breakfast... again, no flour or oil either!

    I,  too,  have made changes in my diet due to cholesterol,  so your delicious looking

    I wish you were too, because hubby won't eat banana bread/muffins. I had to take them in to work today to distribute them!
